Sacuanjoche is a coffee named after Nicaragua’s national flower, celebrated for its beauty and fragrance. This lot typically represents a group or mini lot from smallholder producers in the Jinotega region.
The Java varietal traces its origins back to Ethiopian landrace coffees, which were transplanted to Indonesia centuries ago before spreading to Central America, including Nicaragua. The plants are tall, with bronze tipped leaves and large seeds, and are valued for their excellent cup quality, natural disease resistance, and a balanced expression of sweetness and structure.
Sacuanjoche is processed using the washed method. Ripe cherries are pulped shortly after harvest, fermented to remove mucilage primarily with water, and then dried on patios or raised beds.
