Rosa Marina López's journey in coffee began not as a farm owner, but as a coffee picker. Years spent working through Nicaragua's harvests gave her a deep appreciation for the craft before she and her husband, Guillermo Montenegro, pursued a shared dream of producing exceptional coffee of their own. In 2004, Rosa received five hectares of land, naming it Finca La Lima after a flourishing lemon tree that stood proudly on the property. Over the years, the farm expanded to higher elevations, where cooler temperatures and slower cherry maturation helped unlock greater sweetness and complexity.
Today, Finca La Lima is a reflection of Rosa's perseverance. Through challenges such as coffee leaf rust and unpredictable weather, she has continued to focus on quality, carefully cultivating Red Catuai and refining every harvest. Working alongside Caravela, her coffees now reach roasters around the world, showcasing the dedication of a producer whose passion has grown alongside her farm
After harvesting, ripe coffee cherries are depulped to remove the outer fruit before undergoing fermentation to break down the remaining mucilage. The beans are then thoroughly washed with clean water and dried slowly until they reach the ideal moisture content. This process produces a clean, transparent cup that highlights the coffee's natural sweetness, vibrant acidity, and varietal characteristics.
