Grown in the lush, mountainous landscapes of Rwanda, this Red Bourbon reflects the country's rich coffee growing heritage and distinctive terroir. The region's high elevations, fertile volcanic soils, and cooler temperatures create favourable conditions for coffee cultivation, allowing cherries to mature slowly and develop greater sweetness and flavour complexity.

Red Bourbon is the red fruited form of the Bourbon variety, named for its cherries that turn red when fully ripe. It is widely cultivated in Rwanda and valued for its sweetness and bright acidity. It thrives in the country's high altitude growing conditions, where cooler temperatures encourage slower cherry maturation and flavour development. 

The Hybrid Washed process begins with an anaerobic fermentation of whole coffee cherries in an oxygen restricted environment, before they are depulped and washed. This combination brings together the fruit-driven complexity of fermentation with the clarity and structure of traditional washed processing.
