Finca Juan Martín is an innovative and experimental farm owned and managed by Banexport, located in the highlands of Sotará, just 30 minutes from Popayán, Cauca. The project focuses on cultivating, harvesting, and processing a wide range of coffee varieties to develop optimized practices that enhance both quality and consistency.
A range of careful maintenance practices are carried out across the farm. Due to its steep slopes, soil conservation measures are implemented to prevent erosion, and natural undergrowth is encouraged to protect the soil. Coffee crops are regularly evaluated to identify and manage pests or diseases, the tree surfaces are cleaned every 75 days, and the spaces between rows are cleared with a scythe every two months. At every stage, coffees from Finca Juan Martín are cultivated, harvested, and processed according to the highest standards of quality, organization, and control. Each variety is managed with precision, guided by factors such as Brix level, moisture content, and the desired cup profile, ensuring that every lot reflects both scientific understanding and sensory excellence.
This lot features a Red Bourbon, a distinct variety first identified in San Adolfo, the same region where Pink Bourbon originated. The cherries are processed using the traditional Colombian washed method: picked ripe, fermented in open air tanks for 12 to 36 hours, washed to remove mucilage, and dried on patios or raised beds.
