From the highlands of Loja, Ecuador, Finca La Papaya embodies the dedication and precision of producer Juan Peña, one of the country’s most celebrated coffee innovators. This washed Typica Mejorado is a study in clarity, a coffee that balances elegance with expressive character. Ripe cherries are depulped, with about 90% of the mucilage removed through a gentle mechanical brushing process. The nearly mucilage free parchment is then soaked in water for 15 hours, allowing for minimal fermentation and resulting in an exceptionally clean and refined expression of the variety.
Typica Mejorado has been cultivated at Hacienda La Papaya since 2009, from seeds originally sourced from an experimental farm in northern Ecuador. To preserve its genetic integrity, the team maintains a dedicated seed batch, ensuring consistency and vitality across harvests. The variety is known for its high nutritional demands and remarkable productivity, thriving in full sun when provided with sufficient humidity and nutrients.
