Located 2100–2300 masl in the highlands of Gedeb, Halo Beriti Washing Station has been producing standout Ethiopian coffees since 2014. It serves around 750 smallholder farmers who deliver freshly picked cherries, each batch representing the careful work of families tending tiny plots of land. This lot is part of a limited special preparation,  a meticulous process where hand sorting happens repeatedly from the moment cherries are received to the final stages of drying. Only the most perfect fruit makes it through.

  • 90% perfectly ripe red cherries
  • 5% semi‑ripe
  • 5% overripe

These cherries are collected from a small number of farmers and kept completely separate from other lots. Because of this selective approach, only a tiny number of bags are produced each year. Often, the cherries come from a single day lot, giving the coffee remarkable clarity and consistency. Like most natural processed coffees in Ethiopia, cherries undergo an initial sort for ripeness and quality, then are rinsed clean before drying. They are spread across raised beds and turned constantly to ensure even airflow and slow, controlled drying. Depending on the weather, this stage can take anywhere from 8 to 25 days. The extended drying time amplifies sweetness, deepens fruit character, and preserves the vibrancy that Ethiopian coffees are celebrated for.
