Finca Juan Martín is an innovative and experimental coffee farm owned and operated by Banexport. The project focuses on cultivating, harvesting, and processing multiple coffee varieties in order to refine best practices at every stage of production and achieve the highest possible quality. Beyond its role as a production site, Juan Martín also serves as a model and learning resource for producers who work with Banexport. The farm is located in the highest reaches of Sotará, about 30 minutes from Popayán. It is committed to environmentally responsible farming while creating employment opportunities for the local community, along with access to education and skill development. Due to the farm’s steep terrain, soil conservation is a key priority. Natural undergrowth is preserved to reduce erosion, and coffee plants are regularly monitored for pests and diseases. Trunks are cleaned approximately every 75 days, while the spaces between rows are cleared with a scythe every two months to maintain healthy growth conditions.Colombia is best known for its washed coffee process. Typically, cherries are harvested at peak ripeness and depulped on the same day, followed by open air fermentation in tanks or containers for 12 to 36 hours. After fermentation, the coffee is thoroughly washed to remove mucilage and then dried on patios, in solar or parabolic dryers, or by mechanical means. In some cases, mechanical demucilaging is used instead of traditional fermentation. This lot features Sidra, a variety originating in Ecuador, believed to be derived from Bourbon and Typica genetics or developed as a hybrid by Nestlé. Its unique lineage contributes to its distinctive cup profile and experimental appeal.
