Perched at over 2000 masl in Santa María, Huila, Finca Costa Rica is home to Faver Ninco and his family. Located in Santa María, Huila, the farm benefits from cool mountain temperatures, high elevation, and slower cherry maturation, creating the ideal conditions for coffees with remarkable clarity, sweetness, and complexity.
Unlike many coffee producing regions with distinct harvest seasons, Finca Costa Rica experiences more irregular flowering due to its cooler climate, softer sunlight, and less predictable rainfall. Cherries mature gradually throughout the year, allowing it to selectively harvest only the ripest fruit over multiple picking cycles. Pink Bourbon is celebrated for its expressive acidity character. The high elevation further enhances the coffee's clarity.
After harvest, only fully ripe cherries are hand selected before being depulped to remove the outer fruit. The coffee then undergoes a controlled fermentation to break down the remaining mucilage before being thoroughly washed with clean water. Finally, the parchment coffee is dried slowly until it reaches the ideal moisture content, preserving its quality and stability.
