Named Tomodachi, the Japanese word for friendship, this lot was created through a close collaboration with Tetsu Kasuya. The project reflects a shared pursuit of quality, innovation, and the relationships that connect producers, roasters, and brewers across the coffee community.
High in the mountains of Sidama, Ethiopia, 2400 masl, this exceptional lot begins its journey. Grown from the 74158 variety, the cool temperatures and slow cherry maturation at this altitude help develop remarkable sweetness, complexity, and floral character.
Freshly harvested cherries first undergo a 4 day anaerobic fermentation inside sealed tanks, allowing microorganisms to slowly transform the fruit's sugars and build layers of complexity. The cherries are then depulped and fermented for an additional 3 days, deepening sweetness and enhancing aromatic expression. Following fermentation, the coffee is carefully dried on raised beds for 30 days.Â
