Espresso | Bona, Ethiopia

Grown at an extraordinary 2400 masl in the highlands of Sidama, this coffee is a reflection of one of Ethiopia's most celebrated coffee growing regions. At these elevations, cooler temperatures slow cherry maturation, allowing sugars and organic acids to develop gradually and creating the foundation for a vibrant, complex cup.

Produced at Bona Washing Station, this lot is made up of the Ethiopian variety 74110, a cultivar renowned for its floral aromatics, lively acidity, and elegant sweetness. Through careful harvesting and washed processing, the coffee's inherent character is preserved, resulting in remarkable clarity and transparency in the cup.

The JH process uses bacteria and yeast isolated from coffee materials then added back during processing to elevate and highlight terroir and varietal traits of coffee
