La Papaya is a farm in Saraguro Loja with a long history. Previously a former long-stem-rose producer, Juan the owner, started experimenting with coffee plants only 5 years ago. Holding a degree in agronomy, he has put in many detailed practice into farming - including implementing chips and sensors in every single row in the farm to monitor the soil condition and nutrition for the coffee trees. Juan then collected all this data and turned into flavour profile control for consistency.

This coffee undergoes a traditional washed process, with a 15-hour mucilage fermentation in open-air ceramic tanks. They are then dried for 11 days in a controlled temperature drying room.
