This lot comes from Saraguro, a highland community in the Loja region of southern Ecuador, where cool temperatures, rich volcanic soils, and elevations around 2000 meters above sea level create ideal conditions for slow cherry maturation and vibrant cup profiles.
Produced by Juan Carlos Vélez, this coffee showcases a meticulous approach to quality, from selective handpicking to controlled fermentation and careful drying. Typica Mejorado, a variety descended from Bourbon. Recent genetic research by World Coffee Research revealed that it is a hybrid of Bourbon and Ethiopian Heirloom Landrace. After harvesting, ripe cherries are depulped the same day, fermented to remove mucilage, fully washed, and slowly dried under shade to preserve clarity and balance in the cup.
